Our multidisciplinary leadership team combines nationally recognized disability specialists, master bakers, award-winning cake artists, certified pastry professionals, and workforce development experts with decades of real-world experience.
Together, they have developed one of the country’s most comprehensive vocational bakery training programs for adults with disabilities.
Every instructor brings professional industry knowledge into the classroom, ensuring students receive training that reflects today’s workplace expectations—not yesterday’s standards.
Robin Matusow, M.Ed.
A nationally respected disability employment specialist, Robin has dedicated more than three decades to creating innovative workforce development programs that expand opportunities for individuals with disabilities.
A former member of a White House disability task force, she has helped shape public and private initiatives throughout Florida and was instrumental in the creation of Miami-Dade County Public Schools’ nationally recognized JRE Baking Program.
Her vision continues to drive Piece of Cake Bakers’ mission of transforming lives through employment.
Pedro Diaz
Master Baker • Technical Training Director
A third-generation baker and former Publix Bakery Training Manager, Pedro brings decades of commercial bakery leadership to the program.
Currently serving as a Technical Baking Consultant for Rich Products Corporation, Pedro developed Piece of Cake Bakers’ proprietary color-coded instructional system—an innovative methodology that makes professional baking accessible while maintaining industry standards.
Students affectionately refer to his system as “Pedro in Your Pocket.”
Norah de la Pava
World-Renowned Cake Artist
Internationally recognized for her extraordinary cake artistry, Norah has spent nearly three decades creating award-winning custom cakes for clients around the world.
Her achievements include prestigious honors from the British Sugarcraft Guild and first-place recognition at the Global Wedding Competition.
Her creativity and technical excellence inspire students to pursue craftsmanship at the highest professional level.
Pablo de la Pava
Master Chocolatier
A graduate of Barry University and L’École Chocolat, Pablo specializes in artisan chocolate production and mold design.
As one of the industry’s leading chocolate professionals, he brings advanced confectionery techniques and product development expertise to the Piece of Cake Bakers training program.
